I make my own home brew beer starting with crushed malt, hops and yeast. Part of the process involves heating large quantities of water for which I have an Electrim bin which is a 25 litre boiler. Unfortunately the mechanical simmer stat fitted to it failed but, in any case, it's On/Off period was quite long which made the wort boil over when I was trying to simmer it.
So I removed this simmer stat and made an electronic replacement.
As it was, effectively, a prototype I built in as much flexibility as I could as you can see from the Spec
